How to Cook Squirrel

Cooking Squirrel
Even though a squirrel looks like a rat with a fuzzy tail, it is quite a tasty 4 legged meal. A MySpace friend of mine sent me a recipe. Her name is DJ April Dawn, such a sweet lady. An old wives tale states, "If you don't sing while cookin' critters, it's gonna taste like stinky feet fritters!"
Here's the recipe!
Fried squirrel:
1/2 cup of flour
1/2 tsp salt
1/8 tsp black pepper
1 clove of garlic or 1/8 tsp cayenne pepper if you like especially hot?
Chopped onion is also tasty.
2 skinny squirrels, cut up (or 1 fat squirrel)
3 tbs all-purpose flour
In a large plastic food storage bag or plastic container, combine 1/2 cup flour, salt, black pepper, and cayenne pepper; shake it for mixing. Coat em good!

Yum, Yum! Squirrel gravy!
In a large skillet, heat 1/8 inch of oil for 2 skinny squirrels, or 1/4 inch of oil for fat squirrel, over medium-high heat until hot. Add meat; brown on all sides. Turn down heat; cover tightly.
Cook over very low heat until tender, 35-45 minutes for 2 skinny squirrels, 20-25 minutes for fat squirrel, turning pieces once.
Take off the cover and cook 5 minutes...longer to crispy if desired.
Squirrel gravy!
1 1/2 cups of milk with mushrooms or chicken broth if you want the squirrel to taste like chicken.
Use real butter vegetable oil or lard if you don't mind sacrificing a few days of life.
Discard all but 3 tablespoons of oil. Over medium heat, stir flour into the oil. Blend in milk. Cook over medium heat, stirring constantly, until thick and bubbly. Add salt and pepper to taste. Add bouquet sauce if darker is desired. Serve gravy with meat and maybe a side dish of corn on the cob. Squirrels love corn.
Be sure to sing and maybe even dance as you stir.
You can also cook squirrel on the grill. Just don't try gravy.
You can use the same recipie for many critters.

There are squirrel recipes all over the internet. I even found one for squirrel stew. Squirrels are plentiful and many families have survived eating them and other kinds of small animals. Lots of poor folks back in the day added squirrel meat to vegetables for meals. Eating squirrel is making a comeback.
There's even a "Squirrel Cook-Off" in Bentonville Arkansas.
